Explain why mercury is the perferred liquid used in thermometers and NOT water.

If water used in thermometer we couldn't able to find anything over 100 °C (212 °F) or under 0°C (32 °F).These two temperatures are boiling and freezing points of water .

The freezing and boiling points of mercury are -39 °C and 357 °C.

Therefore,the mercury is used in thermometer instead of water.
